    Bon Bon will be closing on July 1st in order to install its brand new kitchen (and other surprises!).

    Reopening on Tuesday, September 5, 2017.

    While waiting to host you at our tables again, the chef took the opportunity to realize one of his dreams: to open a true creative bistro during this summer time.

    BRUSSELS FROM/TO, is the desire to rediscover recipes that have stood the test of time, to deconstruct and then modernise them.  Plunging into the history of a particular area, to lean towards the point of origin, the “from”.

    Chef Christophe Hardiquest has set himself the challenge of re-examining the culinary history of his region, taking its traditional products and flavour combinations and leading them into the future.

    He wanted to share this quest with other chefs, shaking it up by exposing it to other viewpoints, cultures, techniques, sensibilities…

    For this first dinner, he has chosen to invite chefs INAKI AIZPITARTE & LEONARDO PEREIRA.

    Together, they will compose an original, unique 8-course menu, the high point of their creative collaboration.

    L'ARBRE A PAPILLES MAKES ITS DEBUT AT BON-BON

    L'arbre à papilles
    (The taste bud tree)

    A sensory dialogue, voyage of discovery, poetic pathway.

    Les racines du goût (The roots of taste)

    A tribute to tradition and the transmission of knowledge, a large root pierces the wall of the entrance. These roots of taste tap into the most profound gustatory memories.

    The quintessence of this slow alchemy, the seed of a long history moored in underground fibres, a tree springs out of the other side of the wall, offering a generous modern translation of the memory of taste.

    Le voyage des papilles (Journey of the taste buds)

    The taste buds are the fruit of this tree, and they meander through space, participating in the sensory experience and subtle journey orchestrated by chef Christophe Hardiquest.

    An evocative abstraction of the taste buds, these copper mirror menus shimmer on the wall like so many reflections of taste. They are constellations of flavours, textures, aromas and bitterness. Sensors or unveilers of emotions, enhancers of a subtle personal or collective alchemy.

    These copper pieces, hand-polished by the prestigious Maison Vervloet, occasionally whisper a few words in white: Iced sea urchin powder, the salty surf of the sea, the Hesperidean insolence of hogweed, the lyrical pungency of bitter cress...

    Delicately, certain taste buds flutter down onto one table or another, encouraging the diners to take hold of them and dive into their reflections.

    The mirror reflects each person’s taste memories; it reveals and whispers our Proust’s madeleine buried in the crisp scents of reminiscence. The palate’s memory. 

    Encounter

    I met chef Christophe Hardiquest one February morning. Thus began the thrilling sensory dialogue that was to give birth to this concept; a tribute to haute cuisine and the art of living.

    It was also an encounter with a tree, a young ash just next to Bon Bon, harvested from the dense Sonian Forest, its roots separated with the delicate patience of an archaeologist going back in time. The taste bud tree.

    Biography

    Born in 1974, Jean-François D’Or is an accomplished designer. After graduating from ENSAV La Cambre with a degree in industrial design, he opened his own agency, Loudordesign studio. His collections of objects were quickly taken up by distinguished producers, both in Belgium and abroad: Cinna, Domani, Interni Edition, Ligne Roset, Kenzo, La Rochère, Reflect+, Toss B and Vervloet, to name but a few. Weighing corporate requirements and users’ needs in equal measure, his work is always tempered by the necessity of appropriateness.

    Exploring a variety of materials, he brings out their beauty without ostentation.
    His simple, unpretentious, logical objects appeal both for their evident, clearly perceptible design as well as their intrinsic poetry.

    His objects have been shown innumerable times in Brussels, Milan, Paris, London, Hong Kong, Stockholm, Sao Paulo, Tokyo... Named Belgian Designer of the Year in 2013, Jean-François D’Or’s consistency and rigour have given him an impeccable track record that he continues to forge.
